Ingredients

Patties

  • 2 cans (15 oz each) black beans, rinsed and drained
  • 4 Tbsp vegetable oil
  • 1 onion, finely chopped
  • 1 large poblano, finely chopped
  • 3 garlic cloves, minced
  • 1 chipotle in adobo, chopped, plus 1 tsp sauce
  • ¾ cup roasted cashews
  • ½ cup crumbled feta or cotija
  • ¾ cup panko
  • 1 large egg
  • 2 Tbsp mayonnaise
  • Salt and pepper

To serve

  • Cheese (optional): pepper jack, cheddar, Muenster or Swiss
  • 6–8 hearty buns, toasted
  • Chipotle mayo or other condiments
  • Lettuce, onion, pickles

Method

  1. Roast the beans on a foil-lined tray at 350°F until most split and the skins crisp, about 20 minutes.
  2. Soften the onion and poblano in 2 Tbsp oil, about 5 minutes. Add the garlic for 2 minutes, then the chipotle and sauce for 30 seconds.
  3. Pulse the cashews to small pieces. Pulse the beans with the cheese until roughly chopped.
  4. Fold everything together with the panko, egg and mayo, and season.
  5. Shape into patties the width of the buns. Cook in 1 Tbsp oil over medium heat until crisp, about 5 minutes a side, adding cheese at the end if you like.
