Ingredients

Burger

  • 5 oz 75/25 ground beef
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • Yellow mustard, for searing
  • 1 slice American cheese
  • 1 hamburger bun

Animal-style sauce

  • 2 onions, diced
  • 2 Tbsp unsalted butter
  • Pinch of sugar and salt
  • ¾ cup mayonnaise
  • ½ cup ketchup
  • 0.33 cup chives, finely chopped
  • 2 Tbsp Worcestershire sauce
  • 2 dill pickles, finely diced

Method

  1. Cook the onions in the butter with a pinch of sugar and salt over medium heat for about 30 minutes, until deeply caramelized.
  2. Whisk the mayo, ketchup, chives, Worcestershire and a pinch of salt, then fold in the pickles and caramelized onions.
  3. Shape and season the patty. Sear 1–2 minutes over medium-high, spread mustard over the raw top, then flip so it sears into the meat.
  4. Cook to your liking, melting the cheese on for the last minute.
  5. Spread the sauce on the bottom bun, add the patty and close.
